
DETAILS
We left our BALANCAL Funchal Dry Gin, a London Dry Gin with with fennel and spices aromas, rest for six months in a Madeira wine cask. This cask hold a 10 years old Malmsey wine for almost three years before being returned to us from our friends at H.M Borges. All the botanicals were macerated for 24 hours at 50% ABV. We then reduced the alcohol level to 25% ABV and redistill it with all the botanicals inside the pot. After adjusting the alcohol level to around 52% we let it to rest in the cask. Six months later, and after the “angels” taking their share, the alcohol level was adjusted to slightly lower than 50% by adding pure mountain water, drop by drop, before bottling.
FLAVOURS
Clear juniper and fennel flavors. The Madeira wine cask added dried fruit, spices and orange peel notes. Peculiar flavors combining the fennel sweetness, the juniper bitterness and the spices creating a gin with a sweet beginning with a long fresh and dry finish.
HOW TO DRINK
Ideal for an aromatic G&T or Sonic. The most adventurous will drink it neat. With flavors of fennel, spices, died fruits and orange peel, use it to prepare bold cocktails.

Our fennel gin is aged in Madeira (Malmsey) wine casks. Sweet, citrus and spicy notes. Rich body with a fresh, dry finish. Perfect neat, in aromatic G&Ts or bold cocktails.
